This crude method created a very harsh liquor

It's medium body and fresh with very light tannins and alcohol

We then selected additional 9 year-old bourbon barrels for their fruit notes

and the borders of the Vallée de la Marne

The Chauvigne fruit comes mostly from a vineyard called Violettes rich in volcanic schist soils

but the soul of this whiskey comes from its special cask finish
